The answer is, as much as you can. We live in the desert. The Phoenix Metro area gets about an inch of rain a month. To make it simple; if you have a 1000 square foot roof with gutters you can collect about 50 gallons of rain water. Year around that tiny 1000 square foot roof gives you about 620 gallons. Some further annual examples: 1500 square foot roof = 930 gallons, 2000 square foot roof = 1240 gallons.
Mentioned above; the classic way is by gutter attached to a roof. This has proven to be the most efficient way for home owners and renters to fill a tank. A roof has a large surface area to direct the rain water to the gutters and into the tank. Some communities rely on wells to fill their tanks, but a well is expensive to drill. There is the hose method, using city water to fill the tank if the goal is to simply store water for an emergency. But, again, rain is free and so the gutter/roof method is best.
Larger vertical tanks have enough head pressure to operate a garden hose. But, if you need to feed multiple places around the home you will want a pump and pressure tank combo system.
